Buffalo Tempeh Salad
First, what is Tempeh?
- Tempeh is a plant based protein made from fermented soy beans. For best taste, steam & marinate it before cooking. It soaks up any flavor you give it. For this recipe, we used Buffalo sauce for the marinade.
Now, onto the salad 🥗 To make this a filling meal (instead of just veggies), we added Chickpeas and Quinoa. Aside from flavor, these both add even more protein, fiber & important minerals. We then topped it off with a delicious Spicy Cashew Dressing that brought it all together.
This meal is easy & delicious, definitely one of our go-to’s when we want some fresh veggies & lots of flavor! Here's the full recipe:
Buffalo Tempeh Salad
Makes 2 servings
Ingredients
- 6-8 cups Mixed Greens
- 1 cucumber, sliced
- 1 cup cherry tomatoes
- 2 cups cooked Quinoa
- 1 can chickpeas, rinsed and drained
- 1 package Tempeh
- Buffalo Sauce
- Creamy dressing (we chose a spicy cashew, but Ranch would work too)
Instructions
1. Open the tempeh package and slice into strips. Steam the tempeh for 10 minutes in a steamer basket on the stove.
2. Marinate the tempeh strips in Buffalo sauce for a few hours or overnight.
3. Cook the marinated tempeh in a pan over medium heat, browning on both sides.
4. Add greens, sliced cucumbers & cherry tomatoes in two large bowls. Divide the quinoa and chickpeas among each bowl.
5. Top with the cooked tempeh and dressing. Enjoy!
